Ingredients

1 Cup(c)  whole wheat flour
1 Cup(c)  all purpose flour
1 Cup(c)  natural bran
1 Cup(c)  brown sugar, packed
1 Teaspoon(t)  baking powder
1 Teaspoon(t)  baking soda
1 Teaspoon(t)  cinnamon, ground
1/2   salt
1 Cup(c)  boiling coffee
8   dates, chopped
1/2 Cup(c)  molasses
1/4 Cup(c)  vegetable oil
1 Tablespoon(T)  orange zest, grated
2   eggs, beaten

Preparation

In a large bowl, stir together whole wheat flour, all purpose flour, bran, brown sugar, baking powder, baking soda, cinnamon and salt. In a medium bowl, pour boiling coffee over dates. Stir in molasses, oil and orange zest. Add to dry ingredients all at once. Add eggs and stir with a fork just until dry ingredients are moistened. Spoon into prepared muffin cups. Bake in preheated 350 degree F oven for 20 to 25 minutes, or until tops spring back when lightly touched.
