Recipe Description
These cookies can be cut into any desired shape. Our family likes to frost them with chocolate date frosting. If you want to frost the cookies, spread it on cooled cookies, allowing it to dry before serving.

Ingredients

3/4 Teaspoon(t)  baking powder
1 1/4 Teaspoon(t)  baking soda
1/2 Teaspoon(t)  salt
2 3/4 Cup(c)  all purpose flour
2 Tablespoon(T)  unsweetened apple juice concentrate
4   egg whites, or 2 extra large eggs
1/4 Cup(c)  water
1 1/4 Cup(c)  date sugar
3/4 Cup(c)  vegetable shortening

Preparation

Preheat oven to 350°F. Oil two large cookie sheets. In a large bowl, combine shortening, date sugar and water and beat by hand until fluffy. Add eggs and apple juice concentrate and stir well. In a medium sized bowl, combine flour, salt, baking soda and baking powder, and stir until well mixed. Gradually add flour mixture to shortening mixture, stirring well after each addition. Place dough on a lightly floured surface and roll out to 1/4 inch thickness. Cut into cookie shapes using cookie cutters. Place cut out dough on prepared cookie sheets. Bake 11 to 12 minutes, or until cookies are golden around edges. Rotate cookie sheets at halfway point to achieve even baking. Remove pans from oven, then remove cookies from pans and place on counter top until completely cool. Store in an airtight container on counter top or freezer.
