Recipe Description
This lemon icing was made famous by my Grandma Margagetet for her Oatmeal Lemon Cookies. She used this on her cookies, but it also works well on cakes.

Serves Tool

Serves To:USMetric
1/2 Cup(c)  butter
3 Cup(c)  confectioners sugar
2 Drop(dr)  yellow food coloring
1/2 Teaspoon(t)  vanilla extract
2 Tablespoon(T)  lemon juice


Combine the butter, lemon juice, vanilla and confectioner's sugar and beat until light and fluffy. Add more confectioner's sugar, or lemon juice to adjust the consistency as needed.
