Recipe Description
Potato patties are a nice change of pace at the breakfast or brunch table. These fry up crisp and golden, and should be served with butter and a bit of sugar.

1 Teaspoon(t)  salt
1 Teaspoon(t)  baking soda
4 Cup(c)  flour
1 Pound(lb)  potatoes
1 Pound(lb)  potatoes, cooked and mashed
1 Cup(c)  buttermilk, as needed


Peel the raw potatoes and grate them into a linen tea towel. Squeeze and collect the liquid in a bowl and leave to stand. Mix the grated potatoes and mashed potatoes. When the starch has separated from the liquid, pour off the water and add the starch to the potatoes. Add the dry ingredients and mix well, then add enough buttermilk to form a dropping consistency. Beat well and leave to stand a little before frying in spoonfuls in a greased frying pan. Fry on both sides and serve with butter and sugar.
