Recipe Description
A light and refreshing dip that is perfect for a hot summer day.  Try serving with warmed pita bread slices, for dipping.

Ingredients

1   small cucumber
1 1/4 Cup(c)  authentic greek yogurt
1 Clove(clv)  garlic, crushed
1 Tablespoon(T)  fresh mint or dill, chopped
1 Pinch(pn)  salt, to taste
1 Pinch(pn)  pepper, to taste

Preparation

Peel, then coarsely grate the cucumber.  Put in a sieve and squeeze out as much of the water as possible.  Put the cucumber into a bowl.  Add the yogurt, garlic, and chopped mint (reserve a little as a garnish, if desired) to the cucumber.  Season with pepper and mix together thoroughly.  Chill in the refrigerator for about 2 hours before serving.
