Recipe Description
This soup can almost be called kitchen sink soup as you can use jsut about any type of white fish and shrimp and it iwll turn out great.

1 Dash(ds)  pepper
3/4 Pound(lb)  shrimp cleaned
1/2 Cup(c)  croutons, to garnish
3   lemon wedges, to serve
1 Dash(ds)  salt
2   bay leaves
2 Tablespoon(T)  chopped fresh parsley
1 Teaspoon(t)  chopped fresh thyme
1   chopped pared rind of 1 orange
4   canned tomatoes
2/3 Cup(c)  white wine
2   garlic cloves, chopped
2   celery stalks, sliced thinly
2   large onions, sliced
2/3 Cup(c)  olive oil
1 1/4 Pound(lb)  fillets of white fish


Cut the fish into fairly large, thick, serving portions, discarding any skin.

Heat the oil in a large pan , add the onion, celery, and garlic, and fry for 5 minutes, until softened .

Add the fish and shrimp to the pan, then add the wine, tomatoes, pared orange rind, thyme, parsley, bay leaves, salt, pepper, and enough cold water to cover.

Bring to a boil, then simmer, uncovered, for 15 minutes.

Serve the soup hot, with lemon wedges, and garnished with croutons.
