Recipe Description
Spinach and artichoke hearts make up the green in this casserole, while the white is comprised of sauteed onions and cream cheese.  A lovely and rich tasting side dish for the holiday table.

2 Tablespoon(T)  butter
1   medium onion, chopped
20 Ounce(oz)  frozen chopped spinach, thawed and squeezed dry
1/4 Teaspoon(t)  nutmeg, ground
3/4 Teaspoon(t)  oregano, dried
10 3/4 Ounce(oz)  condensed cream of celery soup
4   eggs, beaten
1/8 Teaspoon(t)  pepper
8 Ounce(oz)  cream cheese, at room temperature
1/3 Cup(c)  milk
1/3 Cup(c)  parmesan cheese, grated
6 Ounce(oz)  marinated artichoke hearts


Drain artichokes, reserving 2 tablespoons of the marinade, then chop artichokes and set aside.  Melt butter in reserved 2 tablespoons of marinade in a wide frying pan over medium heat.  Add onion and cook, stirring often, until soft, about 5 minutes.  Remove from heat and stir in artichokes, spinach, nutmeg, oregano, soup, eggs and pepper.  Spoon mixture evenly into a greased shallow 2 quart baking dish.  In a bowl, beat together cream
cheese, milk and Parmesan cheese.  Spread evenly over spinach mixture.  Bake in a 325 degree F oven until center feels firm when lightly pressed, about 35 minutes.
