Recipe Description
When green beans are gently steamed, they retain far more of their nutritional value then if they are boiled. Therefore, this simple salad is a healthy choice for sharing at picnics or potlucks.

Ingredients

1 Pinch(pn)  pepper, to taste
3   ripe tomatoes, cut into wedges (optional)
5 Tablespoon(T)  extra virgin olive oil
2 Tablespoon(T)  red wine vinegar
1 Teaspoon(t)  fresh oregano, chopped
3/4 Cup(c)  feta cheese, crumbled
2   radishes, thinly sliced
3 Tablespoon(T)  fresh cilantro, chopped
1   red onion, chopped
12 Ounce(oz)  green beans, trimmed

Preparation

Bring about 2 inches water to a boil in the bottom of a steamer, or in a medium saucepan. Add the green beans to the top of the steamer, or place them in a metal colander set over the saucepan of water. Cover and steam the beans for about 5 minutes, until just tender. Transfer the beans to a bowl and add the onion, cilantro, radishes, crumbled feta cheese and oregano. Grind pepper over to taste. Whisk the vinegar and olive oil together and then pour over the salad. Toss gently to mix well. Transfer to a serving platter, surround with the tomato wedges, if using, and serve at once, or chill until ready to serve.
