Ingredients

3/4 Cup(c)  water, divided
1/3 Cup(c)  roasted peanuts
2   green onions, sliced diagonally
1/3 Cup(c)  fresh basil leaves, or chopped fresh cilantro
1 Pound(lb)  fresh green beans, ends trimmed
1 Tablespoon(T)  vegetable oil
1/8 Teaspoon(t)  red pepper flakes
4 Clove(clv)  garlic, minced
1 Tablespoon(T)  cornstarch
3 Tablespoon(T)  oyster sauce
12   shiitake mushrooms, dried

Preparation

Place mushrooms in bowl. Cover with warm water. Soak 30 minutes to soften. Drain and squeeze out excess water. Discard stems. Slice caps into thin strips. Combine 1/4 cup water, oyster sauce, cornstarch, garlic and red pepper flakes in small bowl. Mix well. Heat wok or medium skillet over medium high heat. Add oil and swirl to coat surface. Add mushrooms, beans and remaining 1/2 cup water. Cook and stir until water boils. Reduce heat to medium low. Cover and cook 8 to 10 minutes, or until beans are crisp tender, stirring occasionally. Stir cornstarch mixture and add to wok. Cook and stir until sauce thickens and coats beans. (If cooking water has evaporated, add enough water to form thick sauce.) Stir in basil, green onions and peanuts. Mix well.
