Recipe Description
These green beans are prepared with crispy fried bacon, providing a coloiful contrast alongside chicken dishes. They are also delicious with corn bread, for a real southern taste experience.

Ingredients

1/2   white onion, finely chopped
1   ripe tomato, chopped
1 Pinch(pn)  cumin, ground
1 Pinch(pn)  black pepper, freshly ground
1 Pinch(pn)  sea salt, to taste
1 Pound(lb)  fresh or frozen green beans, thawed
4 Slice(sli)  lean bacon

Preparation

In a large, heavy skillet, fry the bacon over low heat. Remove when crispy and drain on absorbent paper. Pour off all but 1 tablespoon of the fat. Saute the onion in the bacon grease over medium heat, and when it is quite dark brown, add the tomato and let the mixture reduce, adding water a little at a time if needed. Add the green beans and cover, stirring occasionally, for about 20 minutes, until the beans are tender. Crumble the bacon and stir most of it into the beans. Save some for garnish. Add salt and pepper to taste. Place the beans on a serving plate and top with the remaining crumbled bacon.
