Recipe Description
Green beans make an excellent side dish at any time of year, but my family loves this recipe during the holidays.  The addition of walnuts adds a festive, crunchy touch.

Ingredients

1 Pinch(pn)  pepper, freshly ground, to taste
1/4 Teaspoon(t)  salt
1/2 Cup(c)  walnuts, chopped
3 Tablespoon(T)  butter
2 Pound(lb)  fresh green beans

Preparation

Wash the beans, then trim and cut into bite sized pieces.  Place in medium saucepan, add a small amount of water, bring to a slow boil, and reduce the heat to medium low.  Continue to cook until crisp tender.  Drain, immediately turn into a bowl filled with ice water for 1 minute.  Drain again and set aside.  In large nonstick skillet melt the butter, add the walnuts, and cook for about 5 minutes, continuing to stir.  Add the beans, tossing to coat with butter, and add salt and pepper.  Cover partially and cook, tossing and stirring occasionally about 6 minutes or until heated through.

Additional notes

Variation:  Substitute olive oil, if desired.
