Recipe Description
Packets of flavored couscous are available in most supermarkets. You can use whichever you like, but garlic and coriander is particularly good for this recipe. Serve as a side dish, or pair it with a crisp green salad for a light meal.

1   large aubergine (eggplant)
4 Ounce(oz)  flavored couscous
2 Tablespoon(T)  fresh mint, chopped
2 Tablespoon(T)  olive oil
1 Pinch(pn)  salt , to taste
1 Pinch(pn)  black pepper, ground, to taste

Preparation

Preheat the grill (broiler) to high. Cut the aubergine into large chunky pieces and toss them with the olive oil. Season with salt and pepper to taste and spread the aubergine pieces on a non stick baking sheet. Grill the aubergine pieces for 5 to 6 minutes, turning occasionally, until they are golden brown. Meanwhile. prepare the couscous according to the instructions on the packet. Stir the grilled aubergine and chopped mint into the couscous and toss thoroughly. Serve immediately.
