This spread, which is similar to baba ganoush, makes an excellent sandwich filler, especially on pita bread with salad on top.

2   parsley sprigs
1/3 Cup(c)  water
3 Tablespoon(T)  lemon juice
3 Clove(clv)  garlic, minced
2 Cup(c)  grilled eggplant, sliced
1/8 Teaspoon(t)  salt
1/8 Teaspoon(t)  red pepper, ground
1 Cup(c)  tahini paste


In small bowl add tahini paste, lemon juice, minced garlic and parsley.  Once combined, place all remaining ingredients in a food processor container fitted with a steel blade.  Cover and process until smooth.
