Pair mango with shrimp for a bright bruschetta topping.

1 Bunch(bn)  fresh basil, chopped for garnish
3/4 Cup(c)  mango salsa
24   medium shrimp, cooked, peeled, deveined and tails removed
1 Tablespoon(T)  fresh basil, thyme or rosemary, chopped
2 Teaspoon(t)  garlic, minced
1/4 Cup(c)  extra virgin olive oil
2   french rolls, each cut into six 1/2 inch thick slices


Toast bread.  In a bowl, combine olive oil, garlic and herbs and drizzle over each bread slice.  Grill shrimp for about 1 minute on each side or until cooked through.  Arrange toast on a platter and place 2 shrimp on each bread slice.  Top with salsa and garnish with chopped basil.
