Recipe Description
There is something luxuriantly daffy about cooking French toast outside. It's not just the reckless abandon of standing by an open fire in a robe and skivvies. Maybe it's the subtle fragrance of smoke that infuses the custard, or the extra crunch on the toast's blistered skin, or the slightly charred corner that is salved by a leak of liquefied cream cheese and blueberries ... Nah, it's the skivvies.

1   loaf italian bread
1 Tablespoon(T)  oil, for coating grill grate
1 Pinch(pn)  kosher salt
1 Teaspoon(t)  vanilla extract
1 1/2 Cup(c)  half and half
5   eggs
3/4 Cup(c)  blueberries
1/2 Teaspoon(t)  almond extract
4 Tablespoon(T)  confectioners' sugar
8 Ounce(oz)  cream cheese, at room temperature


Cut off and discard a small diagonal slice from each end of the bread. Cut the bread on the diagonal into about eight 1 1/2 inch thick slices. Cut a slit through the top crust of each slice to form a deep pocket. In a medium bowl, mix together the cream cheese, 3 tablespoons of the confectioners' sugar and the almond extract. Stir in the blueberries and spoon the filling equally into the bread pockets. Lay the stuffed slices of bread in a shallow 4 quart baking dish, such as a 15 by 10 inch dish. Clean and dry the bowl, then use it to whisk together the eggs, half and half, vanilla extract, salt and remaining 1 tablespoon confectioners' sugar. Pour the mixture evenly over the bread. Carefully tilt the pan and swirl the egg mixture to completely coat the bread. Let sit for 30 minutes, or cover and refrigerate for up to 8 hours. Grill at 350 degrees F until golden on one side, then carefully flip and grill on other side, about 8 minutes total. Serve immediately.
