Recipe Description
These grilled sweet potato slices go well with any barbecued meal.  They are also a fun serving choice during the holidays, as a light sprinkling of coconut gives them a festive flair.

3 Tablespoon(T)  coconut, toasted (optional)
1/2 Teaspoon(t)  salt
1/3 Cup(c)  margarine, melted
3 Pound(lb)  sweet potatoes


Brush grill rack with vegetable oil.  Heat coals or gas grill for direct heat.  Peel sweet potatoes.  Cut into 1 1/2 inch diagonal slices.  Heat 1 inch water to boiling in 3 quart saucepan.  Add sweet potatoes.  Cover and heat to boiling, then reduce heat to low.  Simmer about 12 minutes or almost tender.  Drain.  Mix margarine and salt in a small bowl.  Grill sweet potato slices uncovered 4 inches from medium heat about 20 minutes, brushing frequently with margarine mixture and turning once.  To serve, sprinkle sweet potatoes with coconut, if desired.

Additional notes

Variation:  For a spicy flavor, stir 1/4 teaspoon ground cinnamon or ground red pepper into the margarine mixture.
