8 Ounce(oz)  butter
1 1/4 Cup(c)  dark brown sugar
4   eggs, lightly beaten
2 3/4 Cup(c)  flour
2 Teaspoon(t)  allspice
8 Ounce(oz)  raisins
8 Ounce(oz)  white raisins
1/4 Cup(c)  candied fruit peel
4 Ounce(oz)  walnuts, chopped
6 1/2 Ounce(oz)  guinness


Preheat the oven to 325 degrees F. Cream the butter and sugar together in a mlxing bowl until light. Gradually beat in the eggs. Sift the flour and allspice and gradually fold them into the butter and sugar mixture. Add the raisins, candied fruit peel and walnuts. Mix well and stir in 4 tablespoons of Guinness. Pour the mixture into a greased 7 inch round cake pan that is at least 3 inches high. Bake in the oven for 1 hour at 325 degrees F, then reduce the heat to 300 degrees F, and continue to bake for an additional 1 1/2 hours. Remove the cake from the oven and allow to cool. Take it out of the cake pan and turn it upside down. Prick the base of the cake in many places with a skewer and spoon in about 8 tablespoons of Guinness. Keep the cake upside down in an airtight container for 1 week before eating. During this period, pour more Guinness over it from time to time until you have used the whole bottle.
