This birthday cake gets its sweetness from apple juice and maple syrup instead of from refined sugar.

1 Cup(c)  all purpose flour
1/2 Cup(c)  oat flour
2 1/4 Teaspoon(t)  baking powder, divided
1/4 Teaspoon(t)  salt
1/4 Cup(c)  applesauce
1/2 Cup(c)  apple juice concentrate
1/2 Cup(c)  milk
1/4 Cup(c)  canola oil
1/4 Cup(c)  maple syrup
1 1/2 Teaspoon(t)  vanilla


Preheat oven to 375° F. Lightly oil an 8 or 9 inch square or round cake pan. In a medium mixing bowl, combine flours, 2 teaspoons baking powder and salt. In a large mixing bowl, combine applesauce with baking powder. Add apple juice concentrate, milk, oil, syrup and vanilla to the applesauce. Mix dry ingredients into wet, one half at a time. Scrape batter into pan. Bake 25 minutes, or until a toothpick inserted into the middle comes out clean.
