Ingredients

1/4 Cup(c)  coconut meat, shredded
1   vegetable spray, for grilling
18   fresh pineapple chunks
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  white pepper, ground
1 Teaspoon(t)  coriander, ground
2 Teaspoon(t)  cumin, ground
1/2   medium jalapeno, chopped
2 Clove(clv)  garlic, crushed
1   lime juice
2/3 Cup(c)  coconut milk
1 Pound(lb)  shrimp, uncooked, shell on

Preparation

Peel and devein shrimp. Combine coconut milk, lime juice, garlic, jalapeno, cumin, coriander, white pepper, and salt. Marinate no more than 1 hour. Soak bamboo skewers in water for 20 minutes. Thread shrimp and pineapple chunks on skewers. Spray skewers with vegetable spray and grill 3 minutes per side, or until shrimp are done. Sprinkle coconut over skewers in last 1 minute of grilling.
