Wheat germ provides a nutty, sweet flavor and a beautifol golden color to these pancakes (not to mention an extra dose of nutrition).

Ingredients

1   egg white
1   egg
2 Cup(c)  buttermilk
1/2 Cup(c)  toasted wheat germ
1/4 Teaspoon(t)  salt
1 Teaspoon(t)  baking soda
2 Tablespoon(T)  sugar
1/2 Cup(c)  whole wheat flour
1 Cup(c)  unbleached, all purpose white flour

Preparation

Sift together the flours, sugar, baking soda, and salt. Stir in the wheat germ. In a separate bowl, whisk together the egg, egg white and buttermilk. Pour the liquid ingredients into the dry. Stir until the batter is moist but still lumpy. Let the batter rest 15 minutes before cooking. Preheat a skillet or griddle and spray with a nonstick spray or brush lightly with oil. Pour 1/4 cup of batter per pancake onto the pan, making sure the pancakes don't touch, and cook until bubbles start to burst on the surface. Turn and cook until golden.
