These elegant golden pancakes are spread with avocado and fresh herbs. A delicious summertime treat.

1/2 Cup(c)  plain flours
1/2 Cup(c)  self raising flour
1   egg, lightly beaten
1/2 Cup(c)  milk
353/500 Gram(g)  fresh mixed herbs, chopped
1/2 Teaspoon(t)  black pepper, cracked
1/2   ripe avocado
2 Ounce(oz)  butter
1 Tablespoon(T)  lemon or lime juice
1/2 Teaspoon(t)  black pepper, cracked


Sift the flours into a large bowl and make a well in the center. Gradually add the combined egg, milk, herbs and pepper, whisking until the batter is smooth and free of lumps. Heat a frying pan and brush with melted butter. Drop teaspoons of batter into the pan and cook until bubbles appear on top. Turn and cook until golden underneath. Keep warm. Mix the avocado, butter, juice and pepper in a small bowl until smooth. Spread on top of the pancakes and serve.
