This lovely crisp features seasonal fruits, and can be made to suit almost any holiday. Use your favorite topping, from nuts and brown sugar, to a mixture of cinnamon and sugar, the results are equally delicious.

2 Cup(c)  apples, peeled, cored and diced
1 Cup(c)  pears, peeled, cored and diced
1/2 Cup(c)  blueberries, fresh or frozen, (thawed and drained if frozen)
10   dark, sweet, seedless cherries
3 1/2 Tablespoon(T)  minute tapioca
1/2 Teaspoon(t)  cinnamon
1 Tablespoon(T)  vegetable oil
1/2 Cup(c)  unsweetened apple juice concentrate (any brand)


Preheat oven to 350° F. Oil a 9 by 9 by 2 inch glass or ceramic baking dish. In a large bowl, stir together all ingredients. Pour mixture into prepared dish and add desired topping. Bake 50 to 55 minutes, or until topping is crisp looking and slightly golden. Remove dish from oven and place on a wire rack to cool. Serve warm or cold. Store uncovered cooled crisp in refrigerator. Freeze in portions.
