Recipe Description
These stuffed shells are guaranteed to feed a hungry crowd.  Bright green pesto sauce tops the pasta adding a colorful flair to holiday tables.

Ingredients

1/2 Teaspoon(t)  salt
1/2 Cup(c)  pine nuts or walnuts, chopped
1 Cup(c)  olive oil
1 Cup(c)  fresh basil leaves, firmly packed
8 Clove(clv)  garlic
1 Cup(c)  spinach pesto or prepared pesto
2   eggs
1/2 Teaspoon(t)  pepper
2 Tablespoon(T)  fresh parsley, chopped
1/2 Cup(c)  parmesan cheese, grated
1 Cup(c)  mozzarella cheese, shredded
2 Cup(c)  ricotta cheese
2 Cup(c)  spaghetti sauce
24   uncooked jumbo pasta shells

Preparation

Heat oven to 350° F.  Cook pasta shells as directed on package, then drain.  Spread spaghetti sauce in rectangular pan, 13 by 9 by 2 inches.  Mix remaining ingredients except pasta shells and Spinach Pesto.  Fill each pasta shell with about 2 tablespoons cheese mixture.  Arrange filled shells on spaghetti sauce.  Cover pan with aluminum foil.  Bake about 45 minutes or until hot.  Serve with pesto.
