Recipe Description
This is the perfect stuffing for filling your holiday turkey.  A combination of tart apples, raisins and cinnamon combine the flavors and scents of the season.  Complete directions for stuffing and roasting your bird are included.

Ingredients

1/2 Teaspoon(t)  cinnamon
1 1/4 Cup(c)  raisins
4   large apples, peeled, cored and diced
8 Slice(sli)  bread, laid to dry for 1 day, then cut into 1 inch cubes

Preparation

In a large bowl, combine all ingredients and add a little water to moisten.  (Stuffing should not be mushy.  Just moist enough to pack your bird.  Feel it with your hand, if it packs together, do not add more water.)  Stuff bird.  Remember that stuffing will expand, so leave a little room.  Lace or sew turkey closed.  If you have extra stuffing that will not fit into the bird, place it in an oiled glass dish, cover, and bake 45 to 50 minutes at 350° F.  Preheat oven to 450° F.  Place turkey on a rack in a turkey roaster so the bird does not sit in liquid while it cooks.  Season to taste with salt and pepper. Add 2 1/2 cups water to pan.  Cover turkey roaster with heavy aluminum foil, sealing edges to keep in moisture.  Bake 1 hour at 450° F.  Turn down oven to 400° F and bake 1hour.  Turn down oven to 375°F and bake 1 1/4 hours.  Turn down oven to 350° F and bake 45 minutes.  During the last 45 minutes, remove aluminum foil from all parts of turkey except legs (and remove foil completely for last 20 minutes of baking time).  Baste with turkey drippings every 15 to 20 minutes of last 45 minutes of baking time.  Remove turkey from oven.  Spoon stuffing from bird and let bird cool 10 minutes before carving.  While bird is cooling, add a small amount (about 2 tablespoons) of pan drippings to stuffing.  Stir, adding drippings a little at a time until stuffing is just moist.  Serve hot.
