Ingredients

2 1/2 Cup(c)  all purpose flour
1/2 Cup(c)  sugar
1 Tablespoon(T)  baking powder
1/2 Teaspoon(t)  salt
1 Cup(c)  milk
1/2 Cup(c)  butter, melted
1   large egg
1 Teaspoon(t)  vanilla extract

Preparation

Preheat oven to 400 degrees F. Grease twelve 2 1/2 by 1 1/4 inch muffin pan cups. In large bowl, combine flour, sugar, baking powder and salt. In medium bowl, with fork, beat milk, melted butter, egg and vanilla until blended. Add to flour mixture, stirring just until flour is moistened (batter wil be lumpy). Spoon batter into prepared muffin pan cups. Bake until tootpick inserted in center of muffin comes out clean, 20 to 25 minutes. Immediately remove muffins from pan. Serve muffins warm, or cool on wire rack to serve later.
