Recipe Description
A great way to get some use out of that turkey frame before throwing it out. It really pays off on a cold night, when a hot bowl of soup is in order.

1   meaty turkey frame, broken up
2 Quart(q)  cold water
1   onion, quartered
1   carrot (unpeeled), quartered
3 Tablespoon(T)  parsley
2   bay leaves
3   celery stalks with leaves
1 Clove(clv)  garlic, minced
1   salt to taste


Put turkey frame and water into a large pot and heat to boiling. Skim foam and add remaining ingredients. Cover and simmer for 2 hours. Remove lid and continue to simmer 1 hour more until stock is concentrated and bones are slightly soft. Remove from heat and pour through colander. Chill. Remove and discard fat that forms on top. Pour into freezer containers and freeze until needed. To reconstitute, add an equal amount of water and soup fixings of your choice.
