Honey Pepper Tofu Stir Fry

3 Cup(c)  broccoli florets, lightly steamed
1   red bell pepper, cut into 1-inch pieces
2 Tablespoon(T)  honey
2 Tablespoon(T)  ketchup
2   scallions, cut into 2-inch pieces
1 Ounce(oz)  can pineapple chunks packed in juice, with juice
1 1/2 Teaspoon(t)  vegetable oil
2 Teaspoon(t)  dry sherry
2 Teaspoon(t)  cornstarch
1/2 Pound(lb)  firm tofu, cut into small cubes
2 Tablespoon(T)  rice vinegar or white wine vinegar
2 Tablespoon(T)  soy sauce

Preparation

In a small bowl, combine the honey, ketchup,vinegar, soy sauce, and pineapple. In another, small bowl, make a paste of the cornstarch and sherry.

Heat the oil in a large nonstick wok or saute pan. Cook the tofu until it begins to brown on all sides. Add the scallions and bell pepper. Cook until the scallions wilt.

Pour the sauce ingredients into the wok. Stir the paste well and add to the wok. Add the broccoli. Simmer until the sauce thickens and clears and the broccoli softens a bit more. Serve over rice or noodles.

This is a good recipe for tofu. I reduced the amount of honey a bit and added a little more soy sauce.
