2 Cup(c)  whole wheat flour
1 Cup(c)  non fat powdered milk
3/4 Ounce(oz)  active dry yeast
1 Tablespoon(T)  salt
2 Cup(c)  warm water (110 degrees f)
1/3 Cup(c)  canola oil
1/3 Cup(c)  honey
6 Cup(c)  unbleached or all purpose flour, divided
2 Tablespoon(T)  cornmeal, if desired


In a bowl, combine the wheat flour, powdered milk, yeast and salt. Add all liquids and mix well. Stir in 4 cups unbleached or all purpose flour. If you have a dough hook, use it. If not, mix and knead by hand. Add the remaining flour, 1/2 cup at a time, until the dough clings to the hook and cleans the side of the bowl. Knead for 7 to 10 minutes, until smooth and elastic. Add flour if necessary to keep sides of bowl clean. Make an indentation with you finger in the dough. It will spring back if it is kneaded enough. Place in a lightly oiled bowl. Cover with a cloth and let rise until doubled in bulk. Press your finger lightly into the dough. If indentation remains, the dough is ready. Lightly oil three (9 by 5 inch) loaf pans. Sprinkle with cornmeal, if desired. Punch the dough down and turn it out onto a lightly floured board. Knead for 1 or 2 minutes. Divide the dough in half and shape into loaves. Place in prepared loaf pans and cover with a cloth. Let rise again until doubled. Preheat the oven to 375° F. Bake for 20 to 25 minutes, or until golden brown. Cool before slicing.
