Houston's Spinach And Artichoke Dip Copy Cat

Ingredients

32 Ounce(oz)  boxes frozen spinach. thawed
1 Tablespoon(T)  minced garlic
2 Tablespoon(T)  minced onion
4 Tablespoon(T)  (1/2 stick) butter
1/4 Cup(c)  all-purpose flour
2 Cup(c)  heavy cream
1/4 Cup(c)  chicken broth
2 Teaspoon(t)  lemon juice
3/4 Teaspoon(t)  tabasco sauce
1/2 Teaspoon(t)  salt
2/3 Cup(c)  grated pecorino romano cheese
1/3 Cup(c)  sour cream
12 Ounce(oz)  jar artichoke hearts drained and coarsely chopped
1/2 Cup(c)  shredded white cheddar cheese

Preparation

Drain the spinach and squeeze through a cheesecloth to remove as much liquid as possible; mince and set aside.

In a heavy saucepan over medium heat. cook the garlic and onion in the butter. stirring. for 3 to 5 minutes. until golden.

Stir in the flour and cook. stirring. for 1 minute.

Slowly stir in the cream and broth and cook until boiling.

Once boiling. stir in the lemon juice. Tabasco sauce. salt, and Pecorino medium Romano cheese; stir until the cheese has melted.

Remove from the heat and let cool for 5 minutes.

Stir in the sour cream. then fold in the spinach and artichoke hearts.

Sprinkle the Cheddar evenly over the top.

Microwave to melt the Cheddar cheese. and serve.
