Recipe Description
This is a great salad to bring to work because it is a complete meal in a bowl. For a vegetarian version, substitute firm cubed tofu, for the chicken.

Ingredients

2 Teaspoon(t)  orange juice
1/2 Tablespoon(T)  water chestnuts, sliced
1 Cup(c)  pineapple chunks, packed in juice and drained
1/2 Ounce(oz)  peas
1/2 Cup(c)  red bell pepper, chopped
2   scallions, sliced
1 Cup(c)  brown rice, cooked
1/2 Pound(lb)  skinless, boneless chicken breast, cut into cubes
1/4 Teaspoon(t)  tabasco sauce
1 1/2 Tablespoon(T)  water
1 Tablespoon(T)  honey
1 Tablespoon(T)  mustard
2 Teaspoon(t)  soy sauce
2 Tablespoon(T)  chunky peanut butter, unsalted and unsweetened
1 1/2 Tablespoon(T)  fresh lime juice
1 Pinch(pn)  cayenne pepper

Preparation

Puree the lime juice, peanut butter, soy sauce, mustard, honey, water, Tabasco and cayenne pepper. Reserve 2 tablespoons, and toss the remainder with the chicken or tofu. Marinate the chicken or tofu for at least an hour and up to one day. Cook the chicken or tofu. If using tofu, bake at 425° F on a baking sheet lined with parchment, for 15 minutes. Shake the pan several times during cooking to loosen the cubes. Then turn over the cubes and bake another 15 minutes, until the cubes get crispy. If using chicken, bake in a similar fashion, but at 350 degrees F and for less time, about 20 minutes altogether. Combine the rice with the scallions, bell pepper, peas, pineapple and water chestnuts in a large bowl. When the tofu or chicken cools, add that as well. Whisk together the reserved 2 tablespoons of marinade and the orange juice and soy sauce. Pour this dressing over the salad and stir gently to mix well.
