Intensely Chocolate Frozen Dessert

Dutch cocoa powder and semisweet chocolate chips make this frozen dessert an intense experience for chocolate lovers. You can increase the agave nectar if you prefer an even sweeter treat.

1/4 Cup(c)  non dairy semisweet chocolate chips
1/2 Cup(c)  agave nectar
2 Teaspoon(t)  pure vanilla extract
3 Tablespoon(T)  cornstarch
3 Tablespoon(T)  crunchy natural peanut butter
1/2 Cup(c)  dutch processed cocoa powder
1 Cup(c)  soy, or other non dairy milk
1 Cup(c)  soy creamer


Combine the creamer, milk, cocoa, peanut butter, and cornstarch in a medium sized saucepan. Cook over medium high heat for about 5 minutes, whisking constantly, until the mixture has thickened a bit. Stir in the vanilla and 1/4 cup of the agave, and taste to see whether some extra sweetener is needed to suit your preference. Cool completely before placing in the fridge for 2 hours, or overnight. Transfer to an ice cream maker and follow the manufacturer's instructions. Add the chocolate chips a few minutes before the end of the process. Place in the freezer for at least 1 hour if you want the dessert to have a firmer consistency.
