Bottled dressing makes an easy marinade for halibut steaks, and works well for boneless chicken breasts, too. The tomato-herb relish can be varied as you like by stirring in items such as minced onion, capers or diced fresh mozzarella.

1/2 Cup(c)  fat-free italian salad dressing
1 Teaspoon(t)  paprika
1/4 Teaspoon(t)  coarse ground black pepper
4   4 to 6 ounce halibut steaks (1 inch thick)
1   large tomato, seeded, chopped
1 Can(cn)  sliced ripe olives, drained
1 Tablespoon(T)  fresh basil or parsley, chopped


In small bowl, combine dressing, paprika and pepper and mix well. Place halibut steaks in resealable food storage plastic bag. Pour dressing mixture over fish and seal bag. Turn bag to coat both sides of fish.

Refrigerate 15 minutes to marinate. Meanwhile, heat grill. In medium bowl, combine tomato, olives and basil and mix well. When ready to grill, carefully oil grill rack. Remove fish from marinade and reserve marinade.

Place fish on gas grill over medium heat, or on charcoal grill 4 to 6 inches from medium-high coals.

Cook 10 to 13 minutes or until fish flakes easily with fork. Turn once and brush occasionally with marinade. Discard any remaining marinade. Serve with tomato relish.
