Recipe Description
Thiis delicious bread serves well with any pasta or fish dish. Slice about 1 inch thick for serving. Accompany with olive oil or unsalted butter, or serve plain. Either way it's a pleasure. Great for sopping up spaghetti sauce too!

1 3/4 Cup(c)  low sodium water
2 Cup(c)  whole wheat pastry flour
1 3/4 Cup(c)  white whole wheat flour
1 Cup(c)  unbleached bread flour
1/4 Cup(c)  potato flour
1/2 Cup(c)  sour cream
2 Tablespoon(T)  cider vinegar
2 Tablespoon(T)  extra virgin olive oil
1/4 Teaspoon(t)  ascorbic acid
3 Tablespoon(T)  vital wheat gluten
3 Tablespoon(T)  sugar
1 Teaspoon(t)  onion powder
1 Tablespoon(T)  bread machine yeast


Place all the ingredients into bread machine in the order listed. Set for Dough. When the dough is ready, roll it out onto a breadboard, lightly floured with whole wheat flour. Press down. Cut into 2 equal pieces and roll into loaf size. Place into 2 loaf pans that have been lightly oiled and flour dusted. Let rise, covered with light cloth or waxed paper, in the proofing oven or in warm spot for about 1 hour. Preheat the oven to 375° F. Bake both loaves at the same time, separated in the oven by about 3 inches, for 30 to 50 minutes. Cool on a rack. Freeze to store, or store in airtight ziplock bags or an airtight container.
