Jalapeno, Lime And Barley Salad

Ingredients

1/2 Cup(c)  green bell pepper, diced
3 Cup(c)  water
1 Cup(c)  dry pearl barley
1/2 Cup(c)  cucumber, seeded and diced
1/2 Cup(c)  tomato, diced
1/2 Cup(c)  red onion, finely diced
1   jalapeno pepper, seeded and finely diced
1/4 Cup(c)  fresh lime juice
1 Pinch(pn)  salt, to taste
2 Tablespoon(T)  extra virgin olive oil
1 Pinch(pn)  pepper, to taste

Preparation

To make the salad: Bring the water to a boil in a medium saucepan and add the barley. Reduce to a simmer, cover, and cook for 30 to 40 minutes, or until tender and most of the water has been absorbed. Let cool. Add the cucumber, tomato, bell pepper and onion to the barley. To make the dressing: Whisk together the dressing ingredients. Drizzle over the salad and toss to coat. Serve chilled.
