These fluffy pancake are perfect served with fresh fruit, whipped cream and sugar free maple syrup.

1/2 Cup(c)  soy flour
1/2 Teaspoon(t)  baking powder
1/2 Teaspoon(t)  salt
1/2 Teaspoon(t)  cinnamon
2 Package(pk)  artificial sweetener
1 Teaspoon(t)  vanilla essence
1 1/2 Cup(c)  water
2   eggs


Put all ingredients except the oil in a blender and mix until smooth. Let the batter rest for 5 minutes. Heat a small skillet over medium to low heat until hot. Add 1 to 2 tablespoons of the batter and cook until small bubbles appear. Flip over and cook for a further 30 to 45 seconds.
