Corn bread and beans is our daughter's absolute favorite meal. She has always been intrigued by the stovetop preparation of this corn bread recipe.

1 Teaspoon(t)  canola oil
2   egg whites, slightly beaten
1 Cup(c)  skim milk
1/2 Teaspoon(t)  salt
5 Teaspoon(t)  baking powder
1 Cup(c)  unbleached or all purpose flour
1 Cup(c)  cornmeal


Preheat the oven to 425° F. Combine the cornmeal, flour, baking powder and salt in a medium bowl. Add the milk and egg whites. Stir well. Heat a 9 inch cast-iron skillet or ovenproof pan over medium high heat. Add the oil to the skillet. While this is heating, mix the batter. Pour the batter into the hot skillet. Bake for 20 minutes, or until golden brown. Serve warm.
