Serves Tool

Serves To:USMetric
1   lime slices, thinly pared to garnish
1 Dash(ds)  salt and pepper
1   lime, finely grated rind
2 Teaspoon(t)  thai green curry paste
2 Tablespoon(T)  blanched almonds, chopped
1 1/2 Cup(c)  fresh white bread crumbs
4   cod fillet pieces, about 5 1/2 ounces
1/2 Teaspoon(t)  seasame oil

Preheat the oven to 400°F/200°C. Brush oil over the bottom of a wide, shallow oven proof dish or pan, then arrange cod pieces in a single layer. Mix bread crumbs, almonds, curry paste, and grated lime rind together in a bowl, stirring well to blend thoroughly and evenly. Season to taste with salt and pepper. Carefully spoon crumb mixture over the fish pieces, pressing lightly with your hand to hold it in place. Bake the dish, uncovered, in the preheated oven for 35-40 minutes, or until the fish is cooked through and the crumb topping is golden brown. Serve the dish hot, garnished with lime slices and rind.
