Recipe Description
This is a recipe handed down to me form my Aunt Josephine.  She loved to makes these pancakes for us kids when we where younger, and we loved to eat them.

Ingredients

1   egg
2 1/2 Cup(c)  buttermilk
1/3 Cup(c)  sugar
1 Pinch(pn)  salt
4 Cup(c)  flour
1 Teaspoon(t)  baking soda

Preparation

Mix the dry ingredients together in a bowl.  Make a well in the center, add the egg and enough buttermilk to make batter of a dropping consistency.  Drop spoonfuls of the mixture onto a lightly greased hot griddle, and cook for 3 to 4 minutes on one side before turning over.  The pancakes are ready to turn when the bubbles burst.  Flip over gently and cook until golden on the other side.  Serve warm with butter and jam or honey.

Additional notes

Note:  We cook the pancakes on a non stick pan at a medium heat, and use a generous tablespoon of batter for each pancake.
