Recipe Description
The combination of almonds, chestnuts and toasted pine nuts in this Korean rice dish is a treat for nut lovers!  An excellent serving choice that pairs with any number of meat and poultry dishes.

Ingredients

3 Tablespoon(T)  pine nuts, toasted
1/4 Teaspoon(t)  cinnamon
1/2 Cup(c)  cooked chestnuts
1/2 Cup(c)  toasted almonds, coarsely chopped
6 Cup(c)  hot cooked rice
1 Tablespoon(T)  oil
2 Tablespoon(T)  honey
1/4 Cup(c)  brown sugar
1/4 Cup(c)  soy sauce

Preparation

In a saucepan, combine soy sauce with brown sugar, honey and sesame oil and heat until sugar has dissolved.  Lower heat, add rice and combine well.  Add chopped almonds, chestnuts and toss to mix.  Serve hot, garnished with cinnamon and toasted pine nuts.

Additional notes

Tip:  To toast nuts, spread out in a shallow baking pan in a 325 degree F oven and bake until lightly browned.  Toss or turn for even browning.
