Recipe Description
Look for bulk imitation crab that is sold at many grocery stores. This salad goes wonderfully as a sandwich filling, on a bed of lettuce, or even in a hulled out tomato for a light lunch.

Ingredients

2 Pound(lb)  imitation crab meat
1/3 Cup(c)  green onion tops, green part only, diced
1/2 Cup(c)  mayonnaise

Preparation

Chop the imitation crab meat into small diagonal pieces. Thinly dice the green onion tops (do not use the white part of the onion-its taste is too strong for this salad). Combine the imitation crab, mayonnaise, and green onions together and blend thorouhly. Refrigerate the salad for a couple of hours before serving.
