Shortbread relies upon the unique flavor of butter for its magnificence. This lactose free version uses shortening for texture and brown sugar and vanilla for flavor. Taste these to see if they don't measure up to the traditional cookie!

2 Cup(c)  all purpose flour
1/2 Cup(c)  rice flour
1/2 Teaspoon(t)  salt
1 Cup(c)  shortening
2/3 Cup(c)  brown sugar, packed
2 Teaspoon(t)  vanilla


In a medium bowl, stir together all purpose flour, rice flour and salt. In a large bowl, using an electric mixer, beat together shortening, brown sugar and vanilla until fluffy. Gradually beat in flour mixture, 1 1/2 cup at a time, scraping down bowl occasionally. Roll dough out between 2 sheets of waxed paper to 1/4 inch thick. Remove top layer of paper. Using a fancy cookie cutter, cut out cookies and arrange on prepared baking sheet. Re-roll dough and continue to cut out until all dough is used. Bake in preheated 350 degree F oven for 20 to 25 minutes, or until golden brown.
