Recipe Description
Warm and comforting, macaroni and cheese is as popular with toddlers as with adults. Lactose free milk adds natural sweetness and creaminess to the dish. Aged firm cheeses, such as Cheddar, Swiss, Gouda and Parmesan, are often better digested by lactose intolerant people because they are low in lactose. Use only if tolerated.

Ingredients

2 Cup(c)  elbow macaroni
1 Teaspoon(t)  salt
4 Cup(c)  lactose free milk
1   bay leaf
1/4 Cup(c)  vegetable oil
1/4 Cup(c)  all purpose flour
2 Teaspoon(t)  dijon mustard
2 Teaspoon(t)  worcestershire sauce
1 Pinch(pn)  salt, to taste
2 Cup(c)  old cheddar cheese, shredded (optional)
1/4 Cup(c)  dry bread crumbs
1 Tablespoon(T)  extra virgin olive oil
1 Tablespoon(T)  parmesan cheese, freshly grated (optional)
1 Tablespoon(T)  fresh parsley, chopped
1 Pinch(pn)  black pepper, freshly ground, to taste

Preparation

In a large pot of boiling water, cook macaroni and salt for 8 minutes, or until al dente (tender but firm to the bite). Drain. Meanwhile, prepare the Bechamel Sauce: In a medium saucepan, heat milk and bay leaf over medium heat until bubbles appear around edge of pan, about 4 minutes. In a large saucepan, heat oil over medium heat. Stir in flour and cook until it starts to turn pale brown and pull away from side of pan. Gradually whisk in heated milk. Cook until thickened and smooth, about 5 minutes. Whisk in mustard and Worcestershire sauce. Season with salt and pepper to taste. Stir in cheese (if using). Discard bay leaf. Stir in macaroni until combined. Spoon into prepared baking dish. To prepare the Bread Crumb Topping: In a small bowl, stir together bread crumbs, oil, cheese (if using) and parsley. Sprinkle evenly over macaroni. Bake in preheated oven for 30 to 35 minutes, or until bubbly and browned on top.
