The easy creamy mint sauce can be served cool or heated over low heat until hot, if desired.

Ingredients

2 Tablespoon(T)  chicken broth
1 Tablespoon(T)  vegetable oil
1 Clove(clv)  garlic, finely chopped
1/4 Teaspoon(t)  salt
1/8 Teaspoon(t)  pepper
2 1/2 Pound(lb)  leg of lamb, butterflied
2/3 Cup(c)  fresh mint leaves, firmly packed
3 Ounce(oz)  cream cheese, softened
2 Tablespoon(T)  chicken broth
1/8 Teaspoon(t)  pepper

Preparation

Brush grill rack with vegetable oil. Heat coals or gas grill for direct heat. To prepare Creamy Mint Sauce: Place all ingredients in blender or food processor. Cover and blend on medium speed about 1 minute, or process until smooth. Mix broth, oil, garlic, salt and pepper. Mop or brush broth mixture over lamb. Cover and grill lamb 4 to 6 inches from medium heat for 30 to 35 minutes for medium (l60°F on meat thermometer), turning lamb and mopping with broth mixture every 10 minutes. Serve lamb with sauce.

Additional notes

If a butterflied leg of lamb is not available, purchase a lamb center leg roast and remove the bone. Using a sharp knife, make a long cut through meat to bone, directly in line with bone and along length of bone. Carefully cut meat away from bone, leaving meat in one piece. Discard bone. Meat will appear lumpy.
