Lemon And Dill Crabmeat Salad On Cucumber

Ingredients

1/2 Pound(lb)  fresh crabmeat, picked over
1   green onion, finely chopped
2 Tablespoon(T)  fresh dill, chopped
1 Teaspoon(t)  lemon peel, grated
1/4 Cup(c)  fat-free mayonnaise
1/8 Teaspoon(t)  cayenne pepper
1   large cucumber, scored and sliced into 1/4 inch rounds
1 Dash(ds)  paprika
6   dill sprigs, for garnish

Preparation

Combine crabmeat, onion, dill, lemon peel, mayonnaise and cayenne pepper. Chill for 1 hour. Divide the cucumber rounds equally onto 6 plates. Mound crabmeat salad onto cucumber rounds, sprinkle with paprika, and garnish with a sprig of dill.
