Lemon Blueberry Coffee Cake

Recipe Description
You can use any fruit in this coffeecake.  Chopped peaches, raspberries, chopped apples or chopped plums are also especially good.

Ingredients

1 Teaspoon(t)  lemon rind, grated
1 Tablespoon(T)  fresh lemon juice
7 Tablespoon(T)  butter, melted
2/3 Cup(c)  milk
1   egg
2 Cup(c)  blueberries (fresh, or one 12 ounce bag frozen unsweetened blueberries, thawed and drained)
1/4 Teaspoon(t)  salt, or to taste
1 Teaspoon(t)  baking soda
2 Teaspoon(t)  baking powder
1 Cup(c)  sugar
1/2 Cup(c)  whole wheat flour
1 1/4 Cup(c)  all purpose flour

Preparation

Preheat the oven to 375°F.  Grease and flour a 9 inch square baking pan.  In a large bowl, stir together both flours, the sugar, baking powder, baking soda and salt.  Toss in the blueberries.  In a large bowl, beat the egg.  Beat in the milk, butter, lemon juice and lemon rind.  Stir into the dry ingredients until combined.  Spread into the prepared pan.  Bake 50 minutes, or until a wooden pick inserted in the center comes out clean and cake has pulled away from the edges of the pan.  Cut into pieces.

 

Additional notes

Variation:  Streusel Topping:  In a medium bowl, stir together 1/3 cup all purpose flour, 1/3 cup whole wheat flour, 1/2 cup sugar and 1/2 teaspoon cinnamon.  Using a pastry blender or two knives, cut 1/3 cup butter or margarine into the flour until mixture resembles coarse meal.  Sprinkle over batter before baking.
