1 Package(pk)  dry yeast
1 Teaspoon(t)  sugar
1/2 Cup(c)  warm water
3/4 Cup(c)  evaporated fat free milk
1/2 Cup(c)  low fat margarine
1/2 Cup(c)  egg substitute
1 Tablespoon(T)  lemon peel, grated
1 Teaspoon(t)  salt
4 Cup(c)  all purpose flour, divided


Dissolve yeast and sugar in warm water in a bowl until bubbly. In a separate bowl combine warm milk, margarine, egg substitute and lemon peel. Add dissolved yeast. In food processor with plastic dough blade in place, combine salt and 3 cups of flour and pulse to blend. With machine running, add liquid mixture and process 20 seconds. Stop machine and add more flour, if needed, to form smooth, wet dough. Turn dough out onto floured surface and knead a few times. Place dough in large, oiled bowl and turn to coat. Cover and allow to rise until doubled, about 1 1/2 hours. Gently punch dough down and knead lightly until smooth. Divide into 20 equal pieces and roll each piece into a ball. Place buns on a greased 12 inch pan with sides just touching. Preheat oven to 375° F. Cover rolls loosely and allow to rise for 20 minutes, or until doubled. Gently brush buns with butter and bake for 35 minutes until brown.
