Recipe Description
I've included vanilla in the flavoring of this cookie to soften the whole oat taste. This may be my favorite oatmeal cookie.

1/2 Cup(c)  raisins, loosely packed
2/3 Cup(c)  rolled oats
1 1/2 Teaspoon(t)  xanthan gum
1/4 Teaspoon(t)  nutmeg, grated
1/2 Teaspoon(t)  cinnamon, ground
1 Teaspoon(t)  vanilla extract
1/4 Teaspoon(t)  salt
1 Tablespoon(T)  baking powder
3/4 Teaspoon(t)  baking soda
1 Cup(c)  oat flour
1 Tablespoon(T)  plain yogurt
2   eggs
1/2 Cup(c)  dark brown sugar
1/4 Pound(lb)  butter


Preheat the oven to 375°F. Grease a cookie sheet. Cream the butter and sugar in a medium sized bowl. Add the eggs. Mix until lighter and thicker. Add all the other ingredients except the raisins. Beat until thick and creamy. Beat in the raisins. The dough will be very soft. Drop by rounded teaspoonfuls onto the prepared pan. Bake for 8 to 9 minutes, until lightly browned. Allow to cool for just a minute or so, for easier removal from the cookie sheet. Transfer from the cookie sheet to a rack and let cool completely.
