My Grandma Lilly was famous for her tomato soup, a family favorite made with sweet and luscious tomatoes and plenty of onions, slowly sauteed and caramelized.

2 Tablespoon(T)  olive oil
2 Tablespoon(T)  non dairy margarine
3   large onions, chopped
2 Pound(lb)  ripe tomatoes, chopped
1 Teaspoon(t)  sugar, or to taste
3/4 Teaspoon(t)  kosher (coarse) salt, or more if needed
3/4 Cup(c)  chicken stock or broth
2 Tablespoon(T)  non dairy sour cream, for garnish (optional)


Heat the olive oil and margarine in a medium sized saucepan over medium heat until the margarine melts. Add the onions and cook until they are soft and golden, about 20 minutes. Add the tomatoes, sugar, salt and stock. Cover the pan and simmer for about 30 minutes. The tomatoes should have given up all their juices. If there is not enough liquid, add a little water. Whiz the soup with an immersion blender until it reaches the desired consistency. (Or use a standing blender, but be careful. Make sure the top is on securely and that you cover it with a kitchen towel to avoid scalding your palms.) Add more salt if needed, and water if you prefer a thinner soup. Pour the soup into individual bowls. For an extra touch, spoon a dollop of non dairy sour cream onto each serving.
