Recipe Description
Baking a stuffing separately makes for a lighter, more easily digested dressing that hasnot absorbed the fat from the turkey.  And, of course, it is easier to serve!  This is a family favorite that's been modified to reduce the overall amount of fat.  Almonds are added for calcium.

1/3 Cup(c)  fortified orange juice
1   egg
1/4 Cup(c)  brown sugar, packed
1/4 Cup(c)  vegetable oil
1/2 Teaspoon(t)  nutmeg, ground
1/2 Teaspoon(t)  ginger, ground
1/2 Teaspoon(t)  salt
1 Teaspoon(t)  baking powder
1/2 Cup(c)  unblanched almonds, toasted and chopped
1   carrot, coarsely grated
1 Cup(c)  fresh bread crumbs
1 Cup(c)  all purpose flour


In a large mixing bowl, stir together flour, bread crumbs, carrot, almonds, baking powder, salt, ginger and nutmeg.  In a small bowl, beat together oil and sugar until fluffy.  Beat in egg and orange juice.  Stir into dry ingredients just until moistened.  Spoon into prepared loaf pan and cover with foil.  Bake in preheated 350 degree F oven for 50 to 60 minutes, or until firm to the touch and a toothpick inserted in the center comes out clean.
