Recipe Description
Sweet lobster is cooked in the shell, making a lovely presentation meal. An excellent choice for romantic dinners and special dining occasions.

4 Tablespoon(T)  oil
3 Clove(clv)  garlic
1 Pound(lb)  lean pork, ground
3 Tablespoon(T)  soy sauce
1 Tablespoon(T)  sugar
4 Pound(lb)  lobster
4 Cup(c)  chicken broth
2 Tablespoon(T)  sherry wine
3 Tablespoon(T)  cornstarch mixed
1/4 Cup(c)  water
4   eggs, beaten lightly
3   scallions, finely chopped


Heat oil in two large skillets, and saute garlic and minced pork until pork loses pinkness. Break up particles with fork. Add soy sauce and sugar. Mix well with pork and push aside. Add lobster pieces and saute for a minute or two. Add chicken broth, sherry, salt and pepper to taste. Add lobster meat and simmer for 10 minutes. Mix cornstarch with water and add gradually to the skillet. Stir until thickened and heat to boiling. Tum heat down to medium. Cover and simmer for about 5 minutes. When done, the lobster shell will tum bright red, the lobster meat opaque white. Stir the cornstarch mixture and add gradually to the skillet, stirring until sauce is thickened. Turn off the heat and stir in the beaten eggs. Mix well and add the chopped scallions. Cover and let rest for 2 minutes. Serve with fried rice.

Additional notes

Tip: The recipe can be prepared with the meat of the lobster only (shell discarded).
